Happy Friday! Haha it’s not really a big deal for me anymore since I am a stay at home mom, so the weekends aren’t as exciting for me as when I was working. Also, my son finished his year of preschool last week so we don’t have a lot going on and our days are pretty laid back now. My husband is still planting in the field because we had so much rain for so long and it was too wet for them to plant, so now that it finally stopped raining and the fields have dried up, he has been out working in the fields. I know he has to be exhausted because he goes to work from 5am-1:30pm and then goes out in the field until 8 or 9 at night. But hopefully he will be done in the next week or so and things will get back to normal.
Anyway, I have recently tried a couple of new products that I really love and wanted to share with you all!
The first new product that I tried recently was the Trader Joe’s Chile Lime Chicken Burgers that are only 3sp each and full of so much flavor! I love to have these on a Village Hearth light wheat bun (2sp) and sometimes I put 1sp worth of sliced avocado on the burger to make it even better!
I often will pair it with a side of cottage cheese to make an easy and quick lunch!
A few weeks ago I ate lunch at Popeyes for the first time and ordered their Blackened chicken tenders with their blackened ranch and they were very good! They were only 1sp for all 5 of the tenders and 4sp for the ranch, so it was a great low point meal. Unfortunately, the nearest Popeyes is over an hour away so I can’t eat there very often but I had read on Facebook that someone had found these Tyson Blackened Chicken Breast Strips at Costco that are similar to the ones at Popeyes. Well I don’t have a Costco membership but I looked at my local HyVee grocery store and found them in the freezer section and I was so excited to try them!
I found a recipe online for a copycat version of Popeyes blackened ranch so I adapted it to make my own version and it was delicious! I will post the details of the ranch recipe below, but it turned out to be 4sp for the ranch and it was plenty to have it with 6 of the Tyson blackened chicken strips and I served it with a side of Birdseye Broccoli fries (5sp). I will warn you that the blackened chicken strips are very spicy, so if you don’t like much spice or heat, you wouldn’t like them. But if you do, then you will love them!
- 2 T light sour cream
- 2 T light mayo
- 1 T fat free sour cream
- 1/2 tsp Hidden Valley ranch seasoning mix
- Sprinkle of Zatarain’s blackened seasoning
Mix all ingredients together and serve!
So, those are a couple of new food products that I have tried recently and would highly recommend!
